Very little remains of the castle of Ayub, which gives the town its name. The town has always been important for its fertile gardens at the confluence of the Jalon and Jiloca rivers.

At one time there were five castles along the ridges that dominate the city; they were connected to each other by long walls. Today there remain only the ruins of the principal castle, higher up on the ridge, and occasional traces of the old walls and a few octagonal and square towers.
